Salabration: A Week Of Salads - Nordstrom Cafe's Roasted Vegetable Plate

Day four, going all vegetarian today but with a little twist. The Roasted Vegetable Platter at Nordstrom Cafe, Fashion Valley.

Of the many popular fresh Salad plates that they do offer I wanted to highlight this because I felt it was a rather unique offering but also have to admit was tempted for sheer visual impact, haha.

Very extra chunky vegetables halved or sometimes left whole, roasted in oil and herbs with a good amount of char that's maybe rare to see these days (especially in a department store?). While I found the level of roasting could vary visit to visit, when in the mood it never fails to hit the spot.

The version shown actually has been toned down some from the past where when questioned I was told the major difference was that there's one Corn cob vs. two. There is also no rosemary notes now that the garnish sprig is absent but if you happened to want a squeeze of lemon to sprite things up, slices can be found at the soda dispenser area by the ice tea.

An extra Cheese Crostini for your Roasted Tomato Basil Soup. It's free so why not but also cause life is too short? ;) The healthy Roasted Corn on the Cob here will help offset.

My past department store lunch meal post at the Fashion Valley Mall here.

Hi Kat! Yes melted cheese on toast is definitely hard to resist! :)

Hi Mary, me too! The fake wood print is cool. But I have a soft spot for cafeteria trays in general.. :)
